Homemade Pesto & Mozzarella Sandwich

Now sandwiches, in my humble opinion, are just so boring and so I decided to spruce up a regular cheese and tomato sandwich and thus my Homemade Pesto & Mozzarella sandwich recipe was born-and it’s so simple to make!

Pesto & Mozzarella Sandwich

The crusty Italian bread paired with the nutty and cheesy basil pesto is just to die for and to be honest I could just dip the bread into the pesto and call it a day. However for the sake of good nutrition and healthy eating, which I’m trying to adopt these days, (don’t ask me how it’s going) I also added some spinach and tomato. You can really use whatever fillings you like, I’m a fan of pickled onions and I think they’d work great in this too so run wild!

For the pesto & mozzarella sandwich you want to make sure you’re either buying toasted pine nuts or toasting them yourself in a pan first. If you’re opting for the latter all you need to do is:

  1. Place a saucepan on a low heat
  2. Once heated, add in your pine nuts and gently swirl the pan every so often to ensure they’re toasting evenly
  3. Once golden, remove from the heat!

And that’s literally it! I’d also advise going for an extra virgin olive oil, flavour wise it really makes all the difference.

Homemade Pesto and Mozzarella Sandwich

Ingredients

Pesto

  • 25 g basil
  • 30 g pine nuts toasted
  • 80 ml extra virgin olive oil
  • 45 g parmesan
  • flakey salt to taste

Sandwich filling

  • handful spinach leaves
  • 2 tomatoes sliced
  • 1 buffalo mozzarella sliced
  • flakey salt to taste
  • black pepper to taste
  • 1 loaf of Italian crusty bread

Instructions

  • In a food processor add all the ingredients for the pesto and blitz to the desired consistency of your pesto. I like mine with a bit of a bite!
  • Slice your Italian bread through the middle and generously spread the pesto on both sides.
  • Layer on your spinach leaves and then sliced tomato. Season the tomatoes with salt and black pepper and then top with the sliced buffalo mozzarella.
  • Close your sandwich and then slice at an angle and that's it!
