Raspberry and Clotted Cream French Toast

This delicious Raspberry and Clotted cream French Toast is honestly what dreams are made of! I decided to sweeten it with honey as i’m trying to eat a little healthier these days and so if you’re also trying to do the same then this recipe is great!

Ingredients for Raspberry and Clotted Cream French Toast

  • For the French Toast:
    • 4 thick slices of brioche or challah bread
    • 2 large eggs
    • 50 ml whole milk
    • 1 teaspoon vanilla extract
    • 1/4 teaspoon ground cinnamon
    • 1 tablespoon butter (for frying)
  • For the Topping:
    • Fresh raspberries (you can use frozen if fresh are not available)
    • Honey to taste
    • 2 spoonfuls of clotted cream
    • 1 tablespoon icing sugar (optional) for decoration

Instructions:

  1. Begin by slicing the bread
    • Using a bread knife cut your bread into thick slices. Brioche bread is best however thick white bread would work too.
  2. Prepare the French Toast Batter:
    • In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
  3. Cook the French Toast:
    • Preheat a large skillet over medium heat and melt the butter.
    • Dip each slice of bread into the egg mixture, ensuring both sides are well coated but not soaked.
    • Place the coated bread slices onto the skillet and cook until golden brown on each side, about 3-4 minutes per side.
  4. Assemble the French Toast:
    • Transfer the cooked French toast slices to serving plates.
    • Dust with some icing sugar, drizzle on as much or a slittle honey as you like, scatter on your washed raspberries and top with a dollop of clotted cream.
  5. Serve and Enjoy:
    • Serve immediately while warm.

French Toast Tips and Variations:

  • Bread Choice: Brioche is ideal but any thick-cut bread will work.
  • Clotted Cream Substitute: If you can’t find clotted cream, mascarpone or a thick whipped cream can be used as a substitute.
  • Additions: For extra flavour, consider adding a splash of almond extract to the batter or sprinkling some sliced almonds on top for crunch.
