Greek Meatball Bowl

Ingredients for Greek Meatball Bowl

For the Meatballs:

  • 250g minced beef (you can also use ground lamb or a mix of both)
  • 1 tablespoon garlic paste
  • 1 tablespoon garlic powder
  • 1 tablespoon cumin powder
  • 1/2 1 tablespoon smoked paprika
  • 1 teaspoons salt
  • half a handful of fresh parsley, chopped
  • half a handful of coriander, chopped
  • 1 tablespoon tomato puree

For the Greek Meatball Bowl:

  • handul of cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/2 red onion, thinly sliced
  • crumbled feta cheese, crumbled
  • Fresh parsley for garnish

Instructions

1. Prepare the Meatballs:

  1. In a large bowl, combine the minced beef, garlic paste, garlic powder, cumin powder, smoked paprika, salt, chopped fresh parsley, coriander and tomato puree. Mix until well incorporated.
  2. With wet hands, shape the mixture into 1 1/2-inch meatballs and place them a plate.

2. Cook the Meatballs

  1. Preheat a pan with 3 tablespoons of oil on a medium heat.
  2. Pan fry the meatballs for 6-7 minutes on each side, starting on a medium-high heat to brown them before lowering the heat after 4 minutes.

2. Assemble the Bowls:

  1. Start by adding the salad ingredients: cherry tomatoes, cucumber, red onion, feta cheese and fresh parsley.
  2. Optionally serve witth a side of potato wedges.
