Easy Garlic Butter Shrimp Rolls

These easy garlic butter shrimp rolls are everything you love about a classic lobster roll, but made with juicy king prawns for a twist. These soft brioche rolls are filled with my garlicky chilli butter prawns and fresh coriander, then served with crispy fries and ketchup for the ultimate comfort food meal.

Using shop bought brioche rolls keeps this recipe quick and easy, making it perfect for weeknight dinners, weekend lunches, or when you’re craving restaurant style seafood at home. If you have the time, homemade brioche rolls work beautifully too.

Ingredients

For the Garlic Butter Shrimp Rolls

  • 4 brioche hot dog rolls
  • 400g raw king prawns, peeled and deveined
  • 1 tbsp avocado oil
  • 70g unsalted butter
  • 6 garlic cloves, finely chopped
  • 1 tsp chilli flakes
  • Handful of fresh coriander, finely chopped
  • Salt, to taste
  • Black pepper, to taste

To Serve

  • Fries
  • Ketchup

Instructions

1. Cook the Shrimp

  1. Pat the prawns dry with kitchen paper and season lightly with salt and black pepper.
  2. Heat the avocado oil in a large frying pan over a medium high heat.
  3. Add the prawns in a single layer and cook for 1 minute on each side. They should be slightly undercooked as they will finish cooking later.
  4. Transfer the prawns to a plate and wipe the frying pan clean.

2. Toast the Brioche Rolls

  1. In a separate frying pan, lightly butter the cut sides of the brioche rolls.
  2. Place the rolls butter side down and toast until golden brown.
  3. Remove from the pan and set aside.

3. Make the Garlic Butter Shrimp

  1. Melt the butter in a frying pan over a medium heat.
  2. Add the finely chopped garlic and cook for 1 minute until fragrant, stirring frequently.
  3. Stir in the chilli flakes.
  4. Add the partially cooked prawns and toss to coat in the garlic butter until fully cooked through.
  5. Stir through the chopped coriander.

4. Assemble

  1. Fill the toasted brioche rolls with the garlic butter shrimp.
  2. Spoon any remaining garlic butter from the pan over the shrimp.
  3. Serve immediately with fries and ketchup.

Top Tips

  • Don’t fully cook the prawns during the first fry or they’ll become rubbery after being added to the garlic butter.
  • Toasting the brioche rolls helps stop them becoming soggy.
  • Fresh garlic gives the best flavour.
  • Spoon the leftover garlic butter over the shrimp before serving for maximum flavour.
  • Serve immediately while everything is hot.

Storage

These garlic butter shrimp rolls are best eaten fresh.

If you have leftover garlic butter shrimp, store them in an airtight container in the fridge for up to 2 days. Reheat gently in a frying pan with a little butter and serve in freshly toasted brioche rolls.

FAQs

Can I use cooked prawns?

Yes. Simply warm them through in the garlic butter for a couple of minutes, taking care not to overcook them.

Can I make these ahead of time?

The garlic butter shrimp can be prepared a few hours ahead and reheated gently. Toast the brioche rolls just before serving.

What should I serve with garlic butter shrimp rolls?

They’re delicious with crispy fries and ketchup, but also pair well with coleslaw, potato wedges or a simple green salad.

Can I make homemade brioche rolls?

Absolutely. Homemade brioche rolls are delicious if you have the time, but shop bought rolls make this recipe much quicker and easier. I bought mine from Tesco!
