Baked Cod Recipes

This Baked Cod Recipes has to be one of my favourites yet, it’s fun and super delicious to make for your dinner. The fish is tender and flakey and served in a parchment paper parcel that is great for making your dinner that little bit more exciting.

Making the parchment parcels For Baked Cod Recipes

Now I know what you’re thinking…..how on earth do I make one of those parchment parcels! Well luckily it’s a lot easier than it looks. All you’ve got to do is take a piece of parchment and fold it by alternating each side until you have a concertina like piece. Then simply tie each side with some string. If you don’t have any string then you can use dental floss, it’s oven safe and does the same thing.

This fish is so incredibly delicious and definitely one that you need to add to your roster of meals for the week. You can even switch up the asparagus and cherry tomatoes to whatever vegetables you have in the fridge! You could even switch the protein to something like a piece of salmon if you were feeling fancy.

Baked Cod Parcels shot

Ingredients

  • 2 cod loins
  • 4 teaspoons paprika
  • 2 teaspoons salt
  • 2 teaspoons of black pepper
  • handful of coriander
  • 6 garlic cloves
  • juice of 1 lemon
  • drizzle of olive oil
  • 50g butter
  • 8 cherry tomatoes
  • 1 pack of asparagus

Method

  1. Make your parchment paper parcels by following the instructions above.
  2. Preheat the oven to 180 degrees celsius.
  3. Begin by removing your cod loins from the packaging and patting them dry with a paper towel. Transfer the fish to a chopping board and season each side with paprika, salt and pepper. Make sure to rub the seasoning into fish and ensure each side is coated. Place the fish into the parchment parcels.
  4. Add the washed asparagus and cherry tomatoes to the parcels.
  5. Finely chop the garlic and coriander and scatter over the fish and veg.
  6. Drizzle about a tablespoon of oil and the juice of half a lemon over each fish loin.
  7. Place the fish into the oven to bake for 20 minutes.
  8. I served my fish with a side of roast potatoes which I’ve also got a recipe for!
  9. Serve fresh out of the oven and enjoy!
