Tips For Homemade Cheesy Garlic Bread

  • Use room temperature butter or you’ll struggle to mix it well, simply leave it to soften on the counter overnight (ideally) or 2-3 hours before you start to cook.
  • Ciabatta is the perfect bread for this recipe, it’s super airy with large air holes that are great for the garlic butter to melt and infuse into. Plus it’s crust is crisp and has a great crunch!
  • If you have the time, roast your garlic head in the oven for 40 minutes before getting started and use that in the butter mix, the flavour intensifies so much and makes for the most epic homemade cheesy garlic bread!

Ingredients for Cheesy Garlic Bread

  • 1 Ciabatta loaf (or any crusty bread)
  • 100g unsalted butter (softened at room temperature)
  • 6-8 garlic cloves, finely chopped
  • 1 mild red chili or 1 jalapeño, finely chopped
  • A handful of coriander (roughly chopped)
  • 100g mozzarella cheese (grated or sliced)
  • 50g Red Leicester cheese (grated)
  • 1 tsp salt (to taste)

Instructions

  1. Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.
  2. Prepare the garlic butter:
    • In a bowl, combine the softened butter, finely chopped garlic, chili (or jalapeño), and coriander. Mix everything together until well combined.
    • Add a pinch of salt (1 tsp) to season. Feel free to taste and adjust the seasoning to your liking.
  3. Slice the Ciabatta:
    • Cut the ciabatta loaf in half lengthwise
  4. Spread the garlic butter:
    • Generously spread the garlic butter mixture over the cut sides of the ciabatta, making sure to coat every corner evenly.
  5. Add the cheese:
    • Layer the mozzarella and Red Leicester cheese over the buttered bread. Make sure you cover the garlic butter fully with the cheese.
  6. Bake:
    • Place the bread halves (or slices) on the prepared baking tray and bake for 12-15 minutes, or until the bread is golden, crispy on the edges, and the cheese is beautifully melted.
  7. Finish and serve:
    • Once baked, remove the bread from the oven and let it cool for a minute. If you like, sprinkle some extra fresh coriander over the top before serving for a burst of color and flavor.
  8. Slice into pieces and enjoy the garlic bread whilst still warm!
