My Chicken shish wraps are absolutely divine and are the perfect dinner for you to make when you’re craving a delicious meal. Inside my wraps are juicy chicken skewers, creamy homemade hummus, and a fresh, zesty salad seasoned with sumac, all wrapped in soft Lebanese bread. Plus they’re quick to make, full of flavour, and perfect for an easy lunch or midweek dinner.

Ingredients
For the Chicken Shish Skewers:
- 500g chicken breast, cut into bite-sized pieces
- 2 tbsp coriander powder
- 1 tbsp cumin powder
- ½ tbsp garlic powder
- ½ tbsp onion powder
- 1 tsp turmeric
- 1 tsp smoked cayenne pepper
- 3 tbsp extra virgin olive oil
For the Homemade Hummus:
- 1 ½ cans chickpeas, deshelled
- 3.5 tbsp tahini
- Juice of 1 lemon
- 2 garlic cloves
- Pinch of cumin
- Salt to taste
- 2 ice cubes
- 50ml ice-cold water
- Garnish: chickpeas, paprika, parsley, olive oil
For the Garlic Sauce:
- 2/3 cup mayonnaise
- 1/3 cup Greek yogurt
- 2-3 tbsp water (adjust for desired consistency)
- 1 tsp garlic powder
- Salt and black pepper to taste
For the Salad:
- 1 cup cucumber, roughly chopped
- 1 cup tomatoes, roughly chopped
- 1 medium red onion, roughly chopped
- Handful of coriander leaves, roughly chopped
- Juice of 1 lemon
- 1 tsp sumac
- Salt to taste
To Assemble:
- 4 Lebanese bread wraps
Method for my Chicken Shish Wraps
1. Prepare the Hummus
- Deshell the chickpeas for a smoother texture.
- Add the chickpeas, tahini, lemon juice, garlic, cumin, and salt to a food processor. Blend on medium speed.
- Gradually add the ice-cold water and ice cubes until the hummus reaches a smooth and fluffy consistency.
- Garnish with chickpeas, paprika, parsley, and olive oil. Set aside.
2. Marinate the Chicken
- In a bowl, mix the chicken breast pieces with coriander powder, cumin powder, garlic powder, onion powder, turmeric, cayenne pepper, and olive oil.
- Cover and let marinate for at least 30 minutes (or overnight for deeper flavor).
3. Prepare the Chicken Skewers
- Preheat the oven to 180°C and line a baking tray with foil or parchment paper.
- Thread the marinated chicken pieces onto metal or soaked wooden skewers
- Place the skewers on the prepared baking tray.
4. Bake the Chicken
- Bake the chicken skewers in the preheated oven for 20-25 minutes, turning halfway, until the chicken is cooked through and slightly charred at the edges. Ensure the internal temperature reaches 75°C (165°F).
5. Make the Garlic Sauce
- In a small bowl, combine mayonnaise, Greek yogurt, water, garlic powder, salt, and black pepper. Mix until smooth. Adjust consistency with more water if needed.
6. Prepare the Salad
- Combine the cucumber, tomatoes, red onion, and coriander in a bowl.
- Drizzle with lemon juice, sprinkle with sumac, and season with salt. Toss gently to combine.
7. Assemble the Wraps
- Lay a Lebanese bread flat and spread a generous layer of hummus in the center.
- Add one skewer of chicken, large spoonful of salad and a drizzle of garlic sauce.
- Roll tightly into a wrap.
