Chilli Oil and Feta Breakfast bagel

This Chilli Oil and Feta Cheese Breakfast Bagel is a must-try! With a crispy toasted bagel, creamy garlic herb cheese, avocado, jammy yolk, and a drizzle of chilli oil makes this the ultimate breakfast bagel. Plus it takes less than 20 minutes to make.

Ingredients

  • 1 bagel (your choice of variety), toasted with butter or extra virgin olive oil
  • 1½ tablespoon of Boursin Garlic & Herb Cheese
  • ½ avocado, smashed and seasoned with:
    • A pinch of salt
    • Freshly ground black pepper
    • Juice of 1/4 lemon
    • Cayenne pepper (optional)
  • 1 fried egg with a jammy yolk (adjust to your preference)
  • Feta cheese, crumbled (to taste)
  • ½ handful of fresh coriander, roughly chopped
  • Chilli oil (to taste)

Instructions

  1. Toast the Bagel: Slice your bagel in half and toast it until golden brown. Lightly butter it or brush with extra virgin olive oil for added flavor.
  2. Spread the Base: On the bottom half of the toasted bagel, spread a generous layer of Boursin Garlic & Herb Cheese.
  3. Prepare the Avocado: Mash the avocado in a small bowl and season with salt, pepper, lemon juice, and a pinch of cayenne pepper if you like a hint of heat. Spread the avocado mixture evenly over the garlic herb cheese.
  4. Fry the Egg: Heat a non-stick pan over medium heat and fry the egg to your liking. For a jammy yolk, cook until the whites are set but the yolk remains soft. Place the fried egg on top of the avocado.
  5. Add the Toppings: Crumble feta cheese over the egg, then sprinkle the chopped coriander. Drizzle with chilli oil for a spicy kick.
  6. Finish and Serve: Place the top half of the bagel over the stack and add an extra drizzle of chilli oil, some more crumbled feta, and a sprinkle of coriander if desired.
  7. Enjoy: Serve immediately while warm and you have the best Chilli Oil and Feta Breakfast Bagel. Don’t forget to pair with a fresh cup of coffee or tea!
