My paratha omelette is the perfect option for suhoor when fasting, helping you stay fuller for longer while still being quick and easy to prepare. The crispy, flaky paratha paired with a spiced omelette and melted mozzarella cheese is too good to pass up! Best served straight from the pan while the paratha is crisp, the omelette is soft, and the cheese is perfectly melted.

This version uses ready made frozen parathas but you can make your own if you wish! The frozen kind are widely available in South Asian supermarkets and can also be found in mainstream retailers such as Asda.
Ingredients for Paratha Omelette
For the omelette (serves 1)
• 2 large eggs
• 1/2 tomato, deseeded and finely chopped
• 3 stems fresh coriander, finely chopped
• 1/2 green chilli, finely chopped
• 1/4 onion, finely chopped
• Salt, to taste
• Black pepper, to taste
• 1/2 teaspoon turmeric
• 30g mozzarella cheese
For cooking
• 1 frozen paratha
• Oil or ghee, for frying the omelette


Top tips
• Finely chop all vegetables so the omelette cooks evenly.
• Deseed the tomato to prevent excess moisture.
• Cook the paratha on a medium low heat so it crisps without burning.
• Press the paratha gently with a spatula so it cooks evenly across the surface.
• Do not rush the omelette or it will brown before setting.
Method
- In a bowl, crack in the eggs and add the chopped tomato, coriander, green chilli and onion.
- Season with salt, black pepper and turmeric, then whisk well until fully combined. Set aside.
- Heat a frying pan over a medium low heat and add the frozen paratha.
- Cook from frozen for around 3 to 4 minutes on each side until golden brown and crisp, pressing gently with a spatula to ensure it cooks evenly.
- Remove the paratha from the pan and set aside.
- Add a little oil or ghee to the same pan and allow it to heat over a medium heat.
- Pour in the omelette mixture. Using a spatula, gently push the edges inward so the omelette does not spread to the corners of the pan.
- Allow the omelette to cook for 2 to 3 minutes. Gently lift the edge to check it has turned lightly golden underneath.
- Place the cooked paratha directly on top of the omelette, pressing gently so it sticks.
- Carefully flip the entire omelette and paratha together.
- Sprinkle the mozzarella cheese over one half, then fold the omelette and paratha in half.
- Cook for a further minute until the cheese has melted.
- Remove from the pan and serve immediately.
