Vegetarian Full English Breakfast

A Vegetarian Full English Breakfast is an absolute must on the weekend and it’s why I’ll be sharing this recipe with you today! You’re more than welcome to switch out anything you don’t like and of course add the bits you do. I’ll also be sharing with you some veggie breakfast ideas for how you can get the perfect poached eggs every single time. I promise!

How to poach an egg….

Now I’m sure you’ve seen those gadgets to help you poach an egg or even contemplated using vinegar like a lot of people do online. However I’m here to tell you that you don’t need vinegar or an overpriced contraption to help you poach an egg, all you need is a sieve with a fine mesh which you probably have at home anyway.

  1. Simply crack your egg into a sieve (make sure its over a bowl) and allow the runnier whites to separate out. Transfer the egg into a small bowl.
  2. Get a pot of water that is half full up to a simmering heat
  3. With a spoon create a gentle swirl, you do not need to create tornado in the water!
  4. Gently lower your egg into the water and set a timer for 2 and a half minutes.
  5. Using a slotted spoon, remove the egg from the water once 2 and a half minutes is up and using your finger check the firmness of the egg white. It should be firm to touch and when you wiggle the spoon the yolk should wobble! Feel free to pop the gg back into the water if you think its not quite yet done or if you like a firmer yolk.
  6. Transfer the egg to a plate lined with kitchen towel and season generously with salt and pepper.

Components of a Vegetarian Full English Breakfast

Now my version of a Vegetarian Full English breakfast is not the most traditional and that’s because its vegetarian, but it sure does taste good. For the meat free sausages, I used Linda McCartney’s Vegetarian sausages which are the best in my opinion. They also happen to be vegan! To the baked beans I added garlic granules, pepper and fresh thyme. I also made a mushroom and spinach side with heaps of butter, fresh garlic and thyme! A seeded loaf is my favourite for the toast and I made sure to butter generously! And last but certainly not least I popped two hash browns, along with a tomato in the oven and baked them until they were golden brown. I decided to be healthy and added on some avocado but you can totally skip this!

Ingredients

  • baked beans
  • 1 hash browns
  • 2 vegetarian sausages
  • 1 tomato
  • 1 slice of seeded bread
  • 2 medium eggs
  • ½ avocado optional
  • 1 punnet of mushrooms
  • 1 bag of spinach

Instructions

  • Pop your sausages, hash browns and tomato in the oven and bake according to the packet instructions. Season the tomatoes with lots of salt and pepper!
  • Slice your washed mushrooms and sauté them on a medium heat with 30g of butter for 3 minutes. Add in 3 cloves of crushed garlic, a couple of sprigs of thyme and season with salt. Stir well. Add the washed spinach in and turn of the heat. Stir for 2-3 minutes and the spinach will magically wilt.

  • All that's left to do is heat up your beans and pop your bread in the toaster then plate up!
