For the Chicken Marinade

  • 2 chicken breasts
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp turmeric
  • 1 tsp all-purpose seasoning
  • Salt, to taste
  • Juice of 1/2 lemon
  • 3 garlic cloves, finely minced
  • 3-4 stalks coriander, finely chopped

For the Tzatziki

  • 1/2 cucumber, grated
  • 1 garlic clove, grated or finely minced
  • 250g plain yoghurt or Greek yoghurt
  • Zest of 1 lemon
  • Salt and pepper, to taste
  • Handful of fresh dill, roughly chopped

For the Mediterranean Salad

  • Cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • Cucumber, chopped
  • Olives
  • Feta cheese, crumbled
  • Olive oil
  • Fresh lemon juice

To Serve

  • 1 toasted pitta bread

Step 1: Flatten and Marinate the Chicken

Place the chicken breasts between cling film and flatten slightly using a meat mallet or the back of a pot. This helps the chicken cook evenly and stay juicy.

In a bowl, combine the olive oil, smoked paprika, turmeric, all-purpose seasoning, salt, lemon juice, minced garlic, and chopped coriander.

Coat the chicken thoroughly in the marinade and leave to marinate for at least 30 minutes for maximum flavour.

Step 2: Make the Tzatziki

Grate the cucumber and squeeze out as much excess moisture as possible using kitchen paper or a clean tea towel.
