Easy Mediterranean Chicken Bowl Recipe (High Protein)

This Easy Mediterranean Chicken Bowl Recipe is the perfect high-protein meal for busy weekdays, healthy meal prep, or a nourishing dinner.

Ingredients

For the Chicken Marinade

  • 2 chicken breasts
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp turmeric
  • 1 tsp all-purpose seasoning
  • Salt to taste
  • Juice of 1/2 lemon
  • 3 garlic cloves finely minced
  • 3-4 stalks coriander finely chopped

For the Tzatziki

  • 1/2 cucumber grated
  • 1 garlic clove grated or finely minced
  • 250 g plain yoghurt or Greek yoghurt
  • Zest of 1 lemon
  • Salt and pepper to taste
  • Handful of fresh dill roughly chopped

For the Mediterranean Salad

  • Cherry tomatoes halved
  • 1/2 red onion thinly sliced
  • Cucumber chopped
  • Olives
  • Feta cheese crumbled
  • Olive oil
  • Fresh lemon juice

To Serve

  • 2 toasted pittas

Instructions

Step 1: Flatten and Marinate the Chicken

  • Place the chicken breasts between cling film and flatten slightly using a meat mallet or the back of a pot. This helps the chicken cook evenly and stay juicy.
  • In a bowl, combine the olive oil, smoked paprika, turmeric, all-purpose seasoning, salt, lemon juice, minced garlic, and chopped coriander.
  • Coat the chicken thoroughly in the marinade and leave to marinate for at least 30 minutes for maximum flavour.

Step 2: Make the Tzatziki

  • Grate the cucumber and squeeze out as much excess moisture as possible using kitchen paper or a clean tea towel.
  • Add the cucumber to a bowl with the yoghurt, garlic, lemon zest, salt, pepper, and chopped dill. Mix well and chill until ready to serve.

Step 3: Cook the Chicken

  • You can cook the chicken using any of these methods:

Oven Method

  • Bake at 200°C (fan 180°C) for 18-20 minutes until fully cooked.

Air Fryer Method

  • Air fry at 190°C for 12-15 minutes, flipping halfway through.

Pan Fry Method

  • Cook in a hot pan over medium heat for 5-6 minutes per side until golden and cooked through.
  • Allow the chicken to rest for a few minutes before slicing.

Step 4: Assemble the Bowl

  • Add the Mediterranean salad ingredients to your bowl and drizzle with olive oil and fresh lemon juice.
  • Top with sliced chicken, a generous spoonful of tzatziki, crumbled feta, and warm toasted pitta on the side.
