Place the chicken breasts between cling film and flatten slightly using a meat mallet or the back of a pot. This helps the chicken cook evenly and stay juicy.
In a bowl, combine the olive oil, smoked paprika, turmeric, all-purpose seasoning, salt, lemon juice, minced garlic, and chopped coriander.
Coat the chicken thoroughly in the marinade and leave to marinate for at least 30 minutes for maximum flavour.
Step 2: Make the Tzatziki
Grate the cucumber and squeeze out as much excess moisture as possible using kitchen paper or a clean tea towel.
Add the cucumber to a bowl with the yoghurt, garlic, lemon zest, salt, pepper, and chopped dill. Mix well and chill until ready to serve.
Step 3: Cook the Chicken
You can cook the chicken using any of these methods:
Oven Method
Bake at 200°C (fan 180°C) for 18-20 minutes until fully cooked.
Air Fryer Method
Air fry at 190°C for 12-15 minutes, flipping halfway through.
Pan Fry Method
Cook in a hot pan over medium heat for 5-6 minutes per side until golden and cooked through.
Allow the chicken to rest for a few minutes before slicing.
Step 4: Assemble the Bowl
Add the Mediterranean salad ingredients to your bowl and drizzle with olive oil and fresh lemon juice.
Top with sliced chicken, a generous spoonful of tzatziki, crumbled feta, and warm toasted pitta on the side.
