This easy homemade pepperoni garlic bread recipe is crispy on the outside, soft in the centre and loaded with melted cheese and golden pepperoni. If you’re looking for the ultimate cheesy oven baked garlic bread, this simple recipe delivers bold flavour with minimal effort.

Top Tips

• Make sure your butter is properly softened before mixing so it blends smoothly with the garlic and herbs. Leave it at room temperature for a few hours beforehand.
• Ciabatta works best because its open texture absorbs the garlic butter while still holding its shape when baked.
• For a deeper flavour, roast a whole head of garlic beforehand and mash it into the butter mixture instead of using raw garlic.
• Don’t overload the bread, spread everything evenly so it crisps properly.
• Add the pepperoni on top of the cheese so it slightly crisps in the oven.

Ingredients

Bread
  • 1 ciabatta loaf (or any crusty bread)
Garlic Butter
  • 100 g unsalted butter, softened
  • 6–8 garlic cloves, very finely chopped
  • 1 mild red chilli or 1 jalapeño, finely chopped
  • Handful of fresh coriander, roughly chopped
  • 1 tsp salt (adjust to taste)
Toppings
  • 100 g mozzarella, grated or sliced
  • 50 g Red Leicester cheese, grated
  • 60–80 g pepperoni slices (or enough to layer evenly)

Instructions

  1. Preheat your oven to 200°C and line a baking tray with parchment paper.
  2. In a bowl combine the softened butter, chopped garlic, chilli (or jalapeño), coriander and salt. Mix thoroughly until evenly combined and smooth.
  3. Slice the ciabatta in half lengthways.
  4. Spread the garlic butter generously over the cut sides of the bread, ensuring every edge is well coated.
  5. Scatter the mozzarella and Red Leicester evenly over the buttered surface.
  6. Arrange the pepperoni slices on top of the cheese in a single layer.
  7. Place the bread halves onto the prepared tray and bake for 12–15 minutes, or until the edges are crisp, the cheese has melted fully and the pepperoni has lightly crisped.
  8. Remove from the oven and allow to cool slightly before slicing.
  9. Serve warm while the cheese is still gooey and melted.
