- 1 ciabatta loaf (or any crusty bread)
Garlic Butter
- 100 g unsalted butter, softened
- 6–8 garlic cloves, very finely chopped
- 1 mild red chilli or 1 jalapeño, finely chopped
- Handful of fresh coriander, roughly chopped
- 1 tsp salt (adjust to taste)
Toppings
- 100 g mozzarella, grated or sliced
- 50 g Red Leicester cheese, grated
- 60–80 g pepperoni slices (or enough to layer evenly)
Instructions
- Preheat your oven to 200°C and line a baking tray with parchment paper.
- In a bowl combine the softened butter, chopped garlic, chilli (or jalapeño), coriander and salt. Mix thoroughly until evenly combined and smooth.
- Slice the ciabatta in half lengthways.
