Ingredients

  • 1 slice of sourdough bread
  • 3 tbsp ricotta
  • 1 tsp olive oil for toasting
  • Handful of cherry tomatoes chopped
  • Fresh basil leaves chopped
  • Salt and pepper to taste
  • 2 tsp chilli oil
  • 1 tsp Extra virgin olive oil
  • ½ avocado sliced
  • ½ pear thinly sliced
  • Handful of blackberries
  • 1 tsp sesame seeds black and white

Instructions

Prepare the bruschetta topping

  • Combine chopped cherry tomatoes, basil, salt, pepper, chilli oil, and a drizzle of extra virgin olive oil.

Mix gently and set aside.

    Toast the sourdough

    • Heat olive oil in a pan over medium heat.

    Toast the sourdough until golden and crisp on both sides.

      Assemble the toast

      • Spread ricotta over the warm sourdough.
      • Spoon over the bruschetta mixture.
      • Layer sliced avocado on the plate and sprinkle with black and white sesame seeds
      • Add thin slices of pear.
      • Scatter over blackberries.
