1. Make the dumpling filling

dumpling filling ingredients

In a mixing bowl combine:

  • chicken mince
  • garlic
  • grated ginger
  • spring onions
  • coriander
  • salt
  • MSG
  • black pepper
  • soy sauce

Mix everything together until well combined and slightly sticky.

2. Form the dumpling balls

dumpling balls in the pan

Use a teaspoon to scoop small portions of the chicken mixture.

Roll into small meatballs and set aside. They don’t need to be perfect

3. Add to the pan

Heat sesame oil in a large non-stick pan over medium heat.

Place the chicken balls evenly across the pan.

Leave small gaps between them so the dumplings can cook evenly.

4. Add the dumpling wrappers

dumpling wrappers added and water to steam them and then crips them up at the end

Lay dumpling wrappers directly over the top of the chicken balls so they cover the whole pan like a blanket.

Pour 30ml water into the pan.

Immediately put the lid on.

5. Steam the dumplings

Cook on medium-low heat for 6–8 minutes.

This allows the chicken to cook through and the wrappers to steam.

6. Crisp up the bottoms

Remove the lid and continue cooking for another 5 minutes.

The water will evaporate and the bottom will turn crispy and golden, similar to potstickers.

7. Finish and serve

Drizzle generously with:

  • chilli oil
  • fresh spring onions

Then slice or tear into portions and serve immediately.T hese dumplings blew up online because they solve the most annoying part of dumpling making — folding them.

Top Tips for my Viral Blanket Dumplings

Use a non-stick pan

This ensures the dumplings release easily and stay crispy.

Don’t overcrowd

Leave small spaces between the chicken balls so they cook evenly.

Keep the heat moderate

Too high and the bottoms burn before the chicken cooks.

Add chilli crisp

A spoon of chilli crisp instead of plain chilli oil adds extra crunch and umami.

Try dipping sauces

Serve with:

  • soy sauce + rice vinegar
  • chilli oil + garlic
  • soy + sesame + honey
