Recipe for my Sourdough Breakfast

Ingredients

  • 1–2 slices sourdough bread
  • 2–3 tbsp ricotta
  • 1 tsp olive oil (for toasting)
  • Handful of cherry tomatoes, chopped
  • Fresh basil leaves, chopped
  • Salt and pepper, to taste
  • 1–2 tsp chilli oil
  • Extra virgin olive oil, for drizzling
  • ½ avocado, sliced
  • ½ pear, thinly sliced
  • Handful of blackberries
  • 1 tsp sesame seeds (black and white)

Method

  1. Prepare the bruschetta topping
    • Combine cherry tomatoes, basil, salt, pepper, chilli oil, and a drizzle of extra virgin olive oil.
    • Mix gently and set aside.
  2. Toast the sourdough
    • Heat olive oil in a pan over medium heat.
    • Toast the sourdough until golden and crisp on both sides.
  3. Assemble the toast
    • Spread ricotta over the warm sourdough.
    • Spoon over the bruschetta mixture.
  4. Add toppings
    • Layer sliced avocado on top.
    • Add thin slices of pear.
    • Scatter over blackberries.
  5. Finish
    • Sprinkle with black and white sesame seeds.
    • Drizzle lightly with extra virgin olive oil.
