Ingredients
- 1–2 slices sourdough bread
- 2–3 tbsp ricotta
- 1 tsp olive oil (for toasting)
- Handful of cherry tomatoes, chopped
- Fresh basil leaves, chopped
- Salt and pepper, to taste
- 1–2 tsp chilli oil
- Extra virgin olive oil, for drizzling
- ½ avocado, sliced
- ½ pear, thinly sliced
- Handful of blackberries
- 1 tsp sesame seeds (black and white)
Method
- Prepare the bruschetta topping
- Combine cherry tomatoes, basil, salt, pepper, chilli oil, and a drizzle of extra virgin olive oil.
- Mix gently and set aside.
- Toast the sourdough
- Heat olive oil in a pan over medium heat.
- Toast the sourdough until golden and crisp on both sides.
- Assemble the toast
- Spread ricotta over the warm sourdough.
- Spoon over the bruschetta mixture.
- Add toppings
- Layer sliced avocado on top.
- Add thin slices of pear.
- Scatter over blackberries.
- Finish
- Sprinkle with black and white sesame seeds.
