Top tips

• Use slightly stale brioche so it soaks up the egg mixture without falling apart.
• Whisk the eggs and milk thoroughly for an even custard soak.
• Fry on medium heat so the French toast cooks through without burning.
• Use ripe bananas for the best caramelisation and natural sweetness.
• Serve immediately!

Method

  1. Slice the bread into thick slices. Brioche is best, but thick white bread works too.
  2. In a shallow bowl, whisk together the eggs, milk, vanilla extract and cinnamon until fully combined.
  3. Preheat a large skillet over medium heat and melt the butter.
  4. Dip each slice of bread into the egg mixture, coating both sides but not soaking it for too long.
  5. Place the coated bread slices into the skillet and cook for 3 to 4 minutes on each side until golden brown. Remove from the pan and keep warm.
  6. In the same skillet, add the butter and honey and heat gently over a low heat until melted.
  7. Add the sliced bananas and cook for 1 to 2 minutes on each side until golden and caramelised.
  8. Transfer the French toast to serving plates. Dust with icing sugar if using, drizzle with honey, top with the caramelised bananas, and finish with a generous spoonful of clotted cream plus some icing sugar if you like!
  9. Serve immediately while warm.

  • Whisk the eggs and milk thoroughly for an even custard soak.
  • Fry on medium heat so the French toast cooks through without burning.

FAQs

Can I make Caramelised Banana French Toast ahead of time?
It’s best served fresh, but you can keep cooked French toast warm in a low oven for up to 15 minutes.

Can I use regular white bread?
Yes, but brioche or challah gives a softer, more custardy texture.

Can I add brown sugar instead of honey?
Yes, brown sugar will give a deeper caramel flavour.

How do I stop French toast going soggy?
Use slightly stale bread and avoid soaking it for too long in the custard mixture.
