Slice the bread into thick slices. Brioche is best, but thick white bread works too.
In a shallow bowl, whisk together the eggs, milk, vanilla extract and cinnamon until fully combined.
Preheat a large skillet over medium heat and melt the butter.
Dip each slice of bread into the egg mixture, coating both sides but not soaking it for too long.
Place the coated bread slices into the skillet and cook for 3 to 4 minutes on each side until golden brown. Remove from the pan and keep warm.
In the same skillet, add the butter and honey and heat gently over a low heat until melted.
Add the sliced bananas and cook for 1 to 2 minutes on each side until golden and caramelised.
Transfer the French toast to serving plates. Dust with icing sugar if using, drizzle with honey, top with the caramelised bananas, and finish with a generous spoonful of clotted cream plus some icing sugar if you like!
Serve immediately while warm.
