Caramelised Banana French Toast

My Caramelised Banana French Toast is perfect for weekend breakfasts, special brunches, or whenever you want a breakfast that feels like dessert. Serve it straight from the pan while warm for the best flavour! Made with soft, custardy bread topped with sweet, golden bananas and rich, creamy clotted cream

Ingredients

For the French toast

  • 4 thick slices of brioche or challah bread
  • 3 large eggs
  • 50 ml whole milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon butter for frying

For the caramelised bananas

  • 2 ripe bananas sliced
  • 1 tablespoon butter
  • 1 to 2 tablespoons honey

To serve

  • Honey to taste
  • 2 spoonfuls of clotted cream
  • 1 tablespoon icing sugar optional

Instructions

  • Slice the bread into thick slices. Brioche is best, but thick white bread works too.
  • In a shallow bowl, whisk together the eggs, milk, vanilla extract and cinnamon until fully combined.
  • Preheat a large skillet over medium heat and melt the butter.
  • Dip each slice of bread into the egg mixture, coating both sides but not soaking it for too long.
  • Place the coated bread slices into the skillet and cook for 3 to 4 minutes on each side until golden brown. Remove from the pan and keep warm.
  • In the same skillet, add the butter and honey and heat gently over a low heat until melted.
  • Add the sliced bananas and cook for 1 to 2 minutes on each side until golden and caramelised.
  • Transfer the French toast to serving plates. Dust with icing sugar if using, drizzle with honey, top with the caramelised bananas, and finish with a generous spoonful of clotted cream plus some icing sugar if you like!
  • Serve immediately while warm.

Notes

TOP TIPS
  • I used the thick brioche loaves you can pick up in the supermarket mine is the taste the difference one from which is my current fave! But really any will work, just remember if you use the pre sliced brioche they are a lot thinner and shouldn’t be soaked for as long !! 
  • Use slightly stale brioche so it soaks up the egg mixture without falling apart
  • Whisk the eggs and milk thoroughly for an even custard soak.
  • Fry on medium heat so the French toast cooks through without burning.
  • Use ripe bananas for the best caramelisation and natural sweetness.
  • Serve immediately!
