Easy Healthy Bagel Breakfast Recipe

Today’s breakfast is a flavour-packed combination of a toasted bagel topped with a soft, savoury scromlette (a scrambled omelette hybrid), a touch of spicy sriracha mayo, sweet fresh berries, and peppery rocket
Servings: 2 people

Ingredients

  • 1 bagel sliced
  • 2 eggs
  • Splash of milk optional
  • Salt and pepper to taste
  • 2 tsp butter
  • 2 tbsp mayonnaise
  • 1 –2 tsp sriracha
  • Handful of fresh rocket
  • 1 tsp extra virgin olive oil
  • Squeeze of lemon juice
  • Handful of mixed berries e.g. strawberries, blueberries, raspberries

Instructions

Prepare the sriracha mayo

  • Mix mayonnaise and sriracha in a small bowl until smooth.

Dress the rocket

  • Toss the rocket with extra virgin olive oil, a squeeze of lemon juice, salt, and pepper.

Toast the bagel

  • Toast until golden and slightly crisp.

Make the scromlette

  • Whisk eggs with milk, salt, and pepper.
  • Heat butter or oil in a pan over medium heat.
  • Pour in the eggs and gently stir, folding as they cook to keep them soft and slightly creamy.

Assemble

  • Spread sriracha mayo on the bagel.
  • Top with the scromlette.

Serve

  • Plate with dressed rocket on the side.
  • Add fresh berries, I used blackberries and strawberries!
