Today’s breakfast is a flavour-packed combination of a toasted bagel topped with a soft, savoury scromlette (a scrambled omelette hybrid), a touch of spicy sriracha mayo, sweet fresh berries, and peppery rocket simply dressed with olive oil and lemon juice. It’s quick to prepare and delivers the perfect balance of creamy, spicy, fresh, and zesty.

Bagel with Scromlette & Sriracha Mayo
This meal is a great example of balance on a plate:
- Carbohydrates from the bagel provide energy
- Protein from the eggs helps keep you full
- Healthy fats from the extra virgin olive oil and mayo add richness
- Fibre and antioxidants from berries and rocket support overall health, I used blackberries and strawberries!
Ingredients
- 1 bagel, sliced
- 2 eggs
- Splash of milk (optional)
- Salt and pepper, to taste
- 2 tsp butter
- 2 tbsp mayonnaise
- 1–2 tsp sriracha
- Handful of fresh rocket
- 1 tsp extra virgin olive oil
- Squeeze of lemon juice
- Handful of mixed berries (e.g. strawberries, blueberries, raspberries)
Method
- Prepare the sriracha mayo
- Mix mayonnaise and sriracha in a small bowl until smooth.
- Dress the rocket
- Toss the rocket with extra virgin olive oil, a squeeze of lemon juice, salt, and pepper.
- Toast the bagel
- Toast until golden and slightly crisp.
- Make the scromlette
- Whisk eggs with milk, salt, and pepper.
- Heat butter or oil in a pan over medium heat.
- Pour in the eggs and gently stir, folding as they cook to keep them soft and slightly creamy.
- Assemble
- Spread sriracha mayo on the bagel.
- Top with the scromlette.
- Serve
- Plate with dressed rocket on the side.
- Add fresh berries for a sweet contrast.
Top Tips
- Keep the eggs soft: Remove from heat just before fully set—they’ll continue cooking and stay creamy.
- Adjust the spice: Add more or less sriracha depending on your heat preference.
- Upgrade your bagel: Wholegrain or seeded bagels add extra fibre and nutrients.
- Add extras: Avocado, smoked salmon, or cheese work really well with this base.
- Prep smarter: Mix your sriracha mayo ahead of time and keep it in the fridge for a few days.
